Lime Cheesecake with
Rainbow Cream

Ingredients:

  • 220 G RAINBOW THICK CREAM
  • ½ CUP BISCUIT CRUMBS
  • ½ CUP MELTED BUTTER
  • 3 TBSP SUGAR
  • 450 G CREAM CHEESE
  • 1 CAN SWEETENED CONDENSED MILK
  • 1/3 CUP GREEN LEMON JUICE
  • 1 TBSP OF GREEN LEMON ZEST
  • ½ CUP ICING SUGAR
  • 1 TSP VANILLA

Preparation:

  • Mix the cracker crumbs with butter and sugar
  • Place the mixture in a baking dish and spread
  • Mix the cheese with condensed milk, lime juice, lime zest, vanilla, sugar and cream until the mixture is well combined
  • Pour the mixture over the crushed crackers into the bottom of the tray.
  • Place in the refrigerator for at least Four to six hours.
  • Garnish with lime slices.
